Purple Palate

Hand-picked, biodynamic merlot grapes from the Adelaide Hills were pressed hard to create intense mulberry, currant and plum flavours. A nice food wine - big fruitcake spices, cloves and cardamom fill the mouth and linger. The big round fruit flavours are balanced with good acidity, leaving a crisp endnote of bitter-sweet chocolate and plum. You could match this wine with savoury (roasted duck) or sweet food (bitter chocolate tart). Drink it well chilled to fully appreciate its tiny but elegant bubbles. -DJ
