At times we can get a little obsessed with single varietal wines in Australia. So it's nice to see an increasing number of producers exploring new blends, especially when it comes to white wine. Good blending isn't about covering up faults or using up grapes. It's about the intelligent exploration of what tastes good, without having to be varietally correct. As far as I'm concerned, whether or not a wine tastes good is far more important than naming what went into it. Henschke have understood this when crafting the Tilly's Vineyard wine. It's a blend of Semillon, Sauvignon Blanc, Chardonnay and Pinot Gris but what matters is that it tastes crisp, with lovely citrus flavours and a little added palate weight in the form of richer tropical fruits.
